Black Bean, Corn, and Tomato Salad

Ingredients:

½ cup cooked black beans, or canned beans, drained and rinsed

½ cup canned corn, drained, or thawed frozen corn

½ cup chopped red and/or green bell pepper

½ cup diced tomatoes

2 tablespoons extra virgin olive oil

¼ cup chopped red onion

2 tablespoons lime juice

Salt and black pepper

Toss the corn, bean, pepper, tomatoes, and onion together in a bowl. Whisk the extra virgin olive oil and lime juice together and season with salt and pepper. Mix the dressing with the beans and vegetables.
